It can be difficult to pack a salad you’re really excited about, especially when fresh ingredients are harder to find in the winter. Luckily, this winter salad uses a base of snap peas, which you can usually easily find in the colder months.
The tangy dressing makes it taste light and crisp, leaving you feeling full without that heavy feeling that many winter comfort foods can bring on.
Here’s how you can make it:
Cut the ends and strings off of the snap peas. For this recipe, you can use the snap peas raw or blanch them to make them a bit crunchier. Slice them in half. In a medium bowl, combine all of the rest of the ingredients except the feta and mix well. Add the feta in with the snap peas, then pour the dressing over the mixture and toss to coat.
This recipe makes enough for 1-2 servings. Pack it to go in your bento box for a healthy and delicious lunch!
