We Tried Weelicious’ Recipe For Simple, Delicious Brown Rice Cakes

The perfect vegetarian dish

We always like to have brown rice on hand because it’s so versatile and a great source of whole grains. When we spotted this recipe for brown rice cakes from Weelicious, we knew we had to try it and we’re so happy we did!

These brown rice cakes only require four ingredients and make for a delicious staple in your bento box lunch.

Here’s the recipe from Weelicious (we halved our recipe to make just enough rice cakes for one serving):

  • One large egg
  • 1 cup cooked brown rice
  • 1/4 cup grated mozzarella cheese
  • Pinch of kosher salt
  • Olive oil

In a medium mixing bowl, whisk the egg. Add in the brown rice, mozzarella cheese (or other cheese of your choice), and salt. Stir until combined. Heat 2 tablespoons of olive oil in a large pan. Carefully place a spoonful of the rice mixture onto the pan and use a spatula to flatten into a patty. Saute until golden brown, about 3-4 minutes on each side.

We made our patties a little smaller than the Weelicious recipe to make sure they fit nicely into our bento box. We also added some apple sauce for dipping.

In our other container, we added a fruit salad of grapes, blackberries and raspberries adorned with our panda picks! We also added in the classic “ants on a log” snack of peanut butter and raisins on celery stalks. Lastly, we added in gummy bears as a treat in our bento divider.

All of this adds up to one yummy vegetarian bento box lunch!
