These Spinach Cake Muffins are Perfect for St. Patrick’s Day

Kids will never know it’s spinach!

We’re big fans of hiding veggies in our recipes (as you can tell by some of our favorite recipes: zucchini tater tots, carrot cake muffins and cauliflower mashed potatoes.) It’s an ingenious way to get picky kids to eat more veggies. That’s why when we saw this recipe for spinach cake muffins on Weelicious, we knew we had to try it!

Even with a cup of spinach added, you can’t taste this sneaky veggie. You can eat these spinach cake muffins plain, with butter or your favorite nut butter, or even top with icing!

We think these would be delicious with cream cheese frosting- a perfect treat for St. Patrick’s Day!

Here’s how you can make these spinach cake muffins:

  • 1/2 cup unsweetened applesauce
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup fresh spinach, packed
  • 1/3 cup sugar
  • 2 tablespoons vegetable or canola oil
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt

Preheat the oven to 350 degrees. In a blender or food processor, puree the applesauce, egg, vanilla extract, spinach, sugar and oil. In a separate bowl, combine the rest of the ingredients. Place the puree in a large bowl. Slowly add the dry ingredients to the wet ingredients and mix to combine. Scoop about a tablespoon each into mini muffin tins. Bake for 12 minutes.
