By this time in the school year, we admit that we start to get a little bored with our lunches. That's why it's important to try new and creative ideas to bring more color into our bento box and brighten up lunchtime! This rainbow veggie sandwich definitely does the trick.
If you have picky eaters in your family, it can be helpful to incorporate fun colors and shapes in their bento box to encourage them to try new foods. We love that this hands-on lunch allows us to play with our food while still enjoying a nutritious lunch.
Here's how you can make this rainbow veggie sandwich:
Thinly slice the peppers. Cut the cauliflower florets off the stalks. Take one piece of whole grain bread and slice in half. Spread your favorite hummus on both slices of bread. Top with peppers, following the colors of the rainbow. Place the cauliflower pieces on either end to look like clouds.
