Tomorrow is National Peanut Butter Day and we are definitely peanut butter lovers! Not only is peanut butter a great source of protein, but it’s also full of the powerful antioxidant vitamin E, bone-building magnesium and muscle-friendly potassium.
Peanut butter also makes for some delicious desserts, like these cookies! These chocolatey delights have a peanut butter cup center for the perfect combination of sweet and salty.
It’s safe to say we’re obsessed. We could barely place them in our bento container before they were all gone!
Here’s how to make your own peanut butter cookies:
For the glaze:
Preheat oven to 375 degrees. Lightly coat baking sheets with non-stick cooking spray. In a mixing bowl, combine shortening, brown sugar, granulated sugar and peanut butter and beat at medium speed until well blended. Beat in the egg and vanilla. In a separate bowl, combine flour, baking soda and salt. Mix into shortening mixture at low speed until just blended. Take a mini peanut butter cup and about a teaspoon of dough. Enclose the peanut butter cup entirely in the dough. Place 2 inches apart on baking sheet.
Bake 8 to 10 minutes, or until cookies are just browned. Remove immediately to cooling rack.
While cookies are cooling, combine shortening, chocolate chips and peanut butter in a microwave-safe cup. Microwave for one minute, then stir. Repeat until all the chocolate is melted. Dip the cookie tops in chocolate. Let the cookies sit until the chocolate hardens, or place them in the fridge to speed the process up!
