These One Sheet Pan Chicken Fajitas Are Perfect for Fall Lunches

One pan = less mess!

At Bentology, we’re a huge fan of quick and easy meals that will also leave us with leftovers for delicious bento box lunches. These one pan chicken fajitas are the answer to all of our prayers!

This recipe we adapted from Laughing Spatula will make enough for dinner and lunch the next day, and they’re a delicious comfort food for fall.

Here’s how we made them:

  • 2 chicken breasts, sliced thin
  • 3 peppers (one red, one green, one yellow), sliced
  • 3 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper


Preheat oven to 400 degrees. In a medium bowl, combine the olive oil and spices. Add in the chicken and toss to coat. Spread the chicken and peppers evenly on the sheet pan. Bake for 25-30 minutes, until chicken is cooked through.

We packed ours in our raspberry bento box with sliced pita bread, some sour cream for dipping, peaches and a handful of almonds. If you don’t have the option to heat your lunch up, pack the chicken in your bento jar!

Then go outside and enjoy the fall weather with your delicious lunch 🙂
