No-Cook, Portion Perfect Summer Lunch

We love hearing how our readers pack their bento boxes, especially when it only takes 10 minutes to prepare! This week, our guest blogger Kim Carolan from shares how she packed her simple and nutritious summer bento box:

It is finally feeling like summer here and, man, it came in with a heat wave! When it’s this hot out, the last thing I want to do is cook. A thing or two to heat up is fine, but I usually try to stay away from super hot meals in the summer months. Cooling foods, especially those that are in season, are what I crave and reach for the most.

So I wanted to put together an entire lunch that requires zero cooking because we can all benefit from that, right? I used my Portion Perfect Bento Set to perfectly portion everything out, and it could not have been easier!

Although you will have to boil some eggs for this lunch, I still think it’s safe to consider this a no-cook meal. I tend to boil a dozen eggs every Sunday for me and my fiancé to have throughout the week, and they really are lifesavers. Not only are they perfect for this lunch, but they’re great in the morning or in-between meals when you need something compact, healthy, and filling!

Eggs are a great source of protein, healthy fats, vitamins, and minerals. They’re basically nature’s multi-vitamin! Pair them with some vegetables, high-quality whole grains, and a little fruit and you’re just about all set. So let’s get to it!

The complete lineup for this healthy, no-cook lunch:

  •  2 hard-boiled organic eggs
  •  1 pickle
  •  Sweet red bell peppers
  •  Mary’s Gone Crackers, Classic Super Seed
  •  Organic purple grapes
  •  Organic salted, dry-roasted cashews

This lunch features so many of my weekly staples and truly focuses on high-quality, natural foods. I always buy organic pasture-raised eggs as often as I can because I believe them to be of the highest quality. I love going to my local Farmer’s Market on Sunday to grab some pickles and other delicious vegetables, like these pickled sweet red bell peppers. Cool refreshing veggies that require no preparation are absolutely perfect this time of year.

These crackers are just about the only ones I buy because they are my absolute favorite - super crunchy, organic, gluten-free, and made with whole grain brown rice, quinoa, and seeds! Between the ingredients, flavor, and crunch of these crackers, you simply cannot go wrong.

Fresh organic fruit is another great way to cool your body down in the summer and provides a sweet little treat! If eggs are nature’s multi-vitamin, grapes are nature’s candy.

It may surprise you, but this lunch is very filling! I used the containers in the Bento Set to portion everything out easily and perfectly. If you enjoy having a little snack, you can save the little portion of cashews for when you get hungry again later! I love keeping nuts and seeds on hand for when a snack-attack strikes. And I always choose ones that are dry-roasted. Nuts and seeds are already a source of healthy fats, we don’t need to add in more fat by roasting them in oil. All you need is the nut or seed itself and maybe a little sea salt. That’s it!

Summer can be a very busy time, so it’s important to be prepared and take good care of yourself with healthy meals. I love that all I had to do was put everything in its respective Portion Perfect container and close the lid. This meal is also completely centered around healthy, whole foods and takes about 10 minutes to put together. I don’t know what else could be better!
