If it were up to us, we would eat tater tots every single day. They're crispy, crunchy and filled with potato-y goodness. However, they're not the healthiest snack because they're usually fried and laden with salt. Luckily, you can make your own healthy tater tots with this recipe!
This recipe only uses four ingredients: potatoes, olive oil, salt and zucchini. The grated zucchini adds a dose of veggies, but you can't even taste them. Perfect for picky eaters!
Here's how to make them:
Place the potatoes in a large pot and cover with cold water. Bring the water to a boil, then boil potatoes for 20-30 minutes or until tender when pricked with a fork. Drain and let the potatoes cool. Preheat the oven to 425 degrees. Grate the zucchini and potatoes into a large bowl. Squeeze the extra liquid out of the zucchini. Add salt to mixture and mix with your hands. Line a baking sheet with parchment paper. Using your hands, take about one tablespoon of the mixture and form small tater tots. Place the baking sheet in the fridge or freezer for about 10 minutes to allow them to firm up. Brush the tater tots with olive oil and sprinkle with salt. Bake for about 30 minutes until crispy, turning halfway through.
