With whole wheat pasta, snow peas and peppers, this dish packs in the fiber and nutrients. It’s perfect to whip up a big batch for lunch or a quick dinner.
Here’s how we made it:
Boil water and cook pasta until tender, about 9 to 11 minutes. While pasta is cooking, whisk together the soy sauce, sesame oil, olive oil, rice wine vinegar, scallions and cilantro. When pasta is done, stir in sauce, snow peas, peppers and red pepper flakes. Stir in sesame seeds before serving and garnish with a few scallion slices.
This meal is so good, we doubt you’ll have leftovers. But if you do, pack them to go for the next day’s lunch in our extra large lidded container! Add in some tofu or chicken for an extra bit of protein.
