Happy Friday! Everyone deserves a treat for having made it through to the end of the week. These Oreo brownies are sure to do the trick and with this healthier version, you can enjoy them guilt-free! These Oreo brownies are made with nonfat Greek yogurt, making them extra fudgy. This recipe comes from Amy's Healthy Baking blog.
Here's how we made them:
Preheat the oven to 300 degrees and lightly coat a brownie pan with nonstick cooking spray. In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt. In a separate bowl, whisk together the butter, eggs and vanilla extract. Stir in the granulated sugar and Greek yogurt, stirring until all large lumps are gone. Stir in the milk. Add in the dry ingredients and stir until just incorporated. Do not overmix! Fold in the crushed Oreos, leaving about 1/3 for the top. Spread the batter into the brownie pan and gently press remaining Oreos on top. Bake for 15-18 minutes and let cool completely before slicing. (Psst... if you can't wait for them to cool, we put ours in the freezer for a couple minutes!)
