I scream, you scream, we all scream for this healthy banana peanut butter ice cream! We couldn’t help but celebrate National Ice Cream Month and luckily, you can enjoy this recipe guilt-free.
With just 5 ingredients, you can still get all the creaminess and richness of ice cream without all the added fat. This recipe makes about 2-3 servings, so adjust the amount of ingredients as needed for more or less people!
Here’s how we made it:
Place the frozen bananas and coconut milk in a food processor or blender and blend until creamy. (Tip: if you don’t want to use the coconut milk, let the bananas thaw for about 5 minutes for easier blending!) Then, add the peanut butter and cocoa powder and blend until smooth. Mix in the chocolate chips and serve immediately.
This recipe is best eaten right away, as refreezing it causes ice crystals to form. We loved eating ours outside on this beautiful summer day in one of our pink bento insulated jars!
