Egg salad is a simple and classic meal that can keep you full for hours. But, when it’s made with mayonnaise it can pack in unwanted calories and fat. Using avocados and Greek yogurt in place of the mayo is a healthier alternative, while still maintaining that creamy texture. Try adding different spices or herbs to this avocado egg salad to find a taste you love!
Here’s how we made ours:
Hard boil the eggs (here’s our guide on how to make perfect hard-boiled eggs!) While you’re waiting for the eggs, mash the avocado in a bowl. Add the onions, mustard, dill and Greek yogurt and mix until combined. Once the eggs are done, peel and chop them. Add them to the avocado mixture, stir to combine. Add in salt and pepper to taste.
This avocado egg salad can be served with crackers, on a wrap, or on a bed of lettuce. Pack it to go in our large lidded container for an easy, guilt-free lunch!
