Today is National Corn Chip Day! We think it’s only appropriate that this well-loved snack is getting the appreciation it deserves.
Corn chips are naturally gluten-free and come in multigrain varieties. You can get chips baked with with black beans, flax seeds and other grains, which can sometimes add a little more fiber to the chips.
You can also make your own homemade corn chips for a healthier version. This crunchy snack is the perfect solution to your salt craving! Like most snacks, be sure to eat them in moderation following portion controlled guidelines.
For the rest of the bento box, we added mini tacos, which are pita pockets stuffed with ground turkey, onions, peppers and a little bit of cheese cheese. We also added in a fresh salad made out of corn, black beans and chopped peppers and onions. Lastly, we added in some grapes for a serving of fruit.
Don’t forget to add your favorite dip- guacamole is our fave, but you can pair corn chips with salsa, sour cream or any other kind of dip in your small bento container!
How are you celebrating National Corn Chip Day? (Psst… if you missed celebrating today, there’s also National Tortilla Chip Day on Saturday, February 24th!)
