We love this quick and easy savory dish.

When you don't have to worry about quantity, you're free to experiment with different types of squash, as in this recipe for example—you can swap the turkey for tofu, or tempeh.

Even changing up the olive oil for another healthy choice, like coconut or sesame, can create surprising and delightful flavor combos. Be sure to use the proper oil for the temperature of your cooking. Be careful not to go over the oil's individual 'flash point,' or you may get smoke, or worse.

Gather your ingredients together:

PP Roasted Squash with Turkey Marinara Sauce, whole wheat roll, parmesan cheese, and grapes


  • Ground Turkey
  • Squash—we like zucchini, yellow, butternut, or acorn
  • Whole wheat roll, sliced
  • Marinara sauce
  • Strawberries, or other in-season fruit
  • Parmesan cheese shavings
  • Olive oil

How To

  1. Brown the turkey.
  2. Add marinara sauce and let simmer.
  3. Slice squash into thin rounds, drizzle with olive oil, sprinkle with salt, and bake in a single layer on a baking sheet at 375º until lightly browned, about 20 minutes.
  4. Toss squash with meat sauce, or layer, as we've done here, and top with Parmesan cheese.

Enjoy and remember—you can swap any fruit you like for the strawberries. Simply keep your fruit in the same portion!

Parmesan is one of those OK cheeses for the lactose intolerant, but for fussy eaters or those with dietary restrictions, simply omit the cheese, and add some crushed walnuts or almonds.


  • Want to know if certain type of cheese is OK to eat for those with lactose intolerance? Check the label for sugar—lactose is the sugar in milk and other dairy products. If the label says there's less than half a gram, it should be well tolerated.
