Tomorrow is Homemade Bread Day, so we’re practicing our bread-baking skills! I’m sure we can all agree that homemade bread is delicious, but most breads can take a few hours to make. That’s why we’re so excited about cloud bread- a low-carb, melt-in-your-mouth bread that’s so easy to make!
If you have 40 minutes to spare, whip up a batch of this cloud bread to bring some home-baked goodness to your bento box. Pair it with some peanut butter whip and the fruit of your choice and you’ll have a delicious, light lunch.
Here’s how to make it:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Beat together the egg whites and cream of tartar until stiff peaks form. In a separate bowl, mix together the egg yolks, cream cheese and sugar until it’s very smooth and there are no clumps of cream cheese. Gently fold the egg whites into the cream cheese mixture, careful not to overmix. Scoop the mixture onto the prepared baking sheet, forming about 6 “buns.” Bake for about 30 minutes, or until slightly browned.
To make the peanut butter whip, simply whisk together ¾ cup whole milk plain Greek yogurt, ¼ cup creamy peanut butter and 1 tablespoon agave nectar. Spread on the cloud bread and top with your favorite fruit!
This combo also makes for a nutritious bento lunch. We paired ours with carrots and trail max for a filling meal!
