May is National Hamburger month, so we’re celebrating by bringing a classic BBQ meal to your bento box! Hamburgers are a kid favorite at summer cookouts and barbecues, but this meal doesn’t have to be saved for parties. These mini meatball sliders transform hamburgers into fun finger foods. With this packed in their bento box, your kids will feel like lunch is always a special celebration!
Here’s how we made it:
In a saucepan, cook crushed tomatoes, garlic, and a pinch of salt and pepper. Keep warm. Preheat the oven to 350 degrees. Place foil over a baking sheet. In a separate bowl, combine the breadcrumbs, parsley, grated cheese, seasoning and egg. Mix well. Add ground beef and mix until it’s well incorporated, but be careful not to over-mix.
Roll into balls and place on a baking sheet. Our recipe made about 10 meatballs. Bake until golden brown, about 15 to 20 minutes. If you’d like to add cheese, place it on the meatballs and bake for about 2 more minutes or until cheese melts. Serve on the slider buns with the tomato sauce and any other toppings you like!
*You can sub in ½ teaspoon of red pepper flakes if you don’t have any seasoning on hand. We love using the Project Smoke rubs because it gives a little bit of that smoky, grilled taste! There are 6 worldly spices flavors in the line, but we selected the Kansas City Smoke for this recipe.
We packed ours with some fresh green beans and cucumbers, chopped watermelon (complete with our festive nature picks!), and trail mix for a snack. Pack it to go for those last few days of school or for a quick picnic lunch while exploring.
