Frozen veggies are the perfect solution for those days when you just can’t get to the grocery store before dinner. We love to stock up on lots of frozen vegetables so that we always have something green on hand! Frozen broccoli is a great option, especially because it doesn’t lose much nutritional value compared to fresh broccoli.
These broccoli and cheese patties are the perfect solution if you’re looking for a last-minute meal! They don’t take much preparation AND they pack in about 15 grams of protein!
Here’s how we made them:
Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil and lightly grease with cooking spray. Heat oil in a small pan and saute the onions and garlic until tender. Remove from heat. While this is cooling, squeeze any excess water out of the broccoli with a towel. In a large bowl, mix together the broccoli, onion and garlic. Then, add the breadcrumbs, cheeses, eggs and salt and pepper if desired. Mix together and form into patties. Place the patties on the prepared baking sheet. Bake for 15 minutes, then flip and bake for another 15 minutes. Enjoy!
We paired ours with apple sauce for dipping, but we think they would also go great with hummus. These patties are perfect for an on-the-go meal in your bento box, along with pretzels, oranges and dark chocolate chips for a sweet treat!
