Almond Butter Cookies – A Yummy Alternative to Granola Bars

They’re gluten free!

Granola bars are great snacks to pack for an easy lunch, but they can be sneaky sources of added sugar. You can make your own homemade granola bars, or you can take it one step further with these healthier almond butter cookies!

Who doesn’t want to eat cookies? And with no sugar added, the agave and dried fruit add just the right amount of sweetnes. The hint of cinnamon and nutmeg make these perfect for the holiday season!

Here’s how to make them:

  • ½ cup almond butter
  • ¼ cup coconut oil, melted
  • 1 large egg
  • 3 tablespoons agave
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free rolled oats
  • ½ cup dried prunes, chopped
  • 1 cup dried cranberries
  • 1 teaspoon ground cinnamon
  • Pinch of ground nutmeg

Preheat oven to 350 degrees. Cover a baking sheet with parchment paper. In a large bowl, combine the almond butter, coconut oil, egg, agave and vanilla extract and stir until well combined. Mix in the rest of the ingredients. Using a round cookie cutter, press the ingredients onto the baking sheet. Bake for about 16 minutes, or until the cookies have browned and firmed up a bit.

  • So, your promotion said this included no added sugar. The recipe includes agave syrup. Which is chemically sugar. Just sugar by another name — and maybe not any healthier.
